This bread is really easy to prepare and with the cast iron pot you get an impressive result
Makes 1 loaf of bread
Ingredients
100 g organic rye flour
240 g organic wheat flour
450 g spelt flour
100 g walnuts
2 teaspoons salt
2 tablespoons sugar
2 tablespoons of rapseeded oil
40 g fresh yeast
500 ml water (luke warm)

Method
Place the cast-iron pot into the oven and heat it up 250 degrees.
In a large bowl sprinkle the yeast and add a litte water until it desolves.
Then add the rest of the water, salt, sugar and the oil and mix well.
Add the flour and mix using a hand mixer for 5 minutes or 10 minutes by hand.
Add the walnuts and mix well into the dough.
Place the dough into a proofing basket and cover with a towel. Leave it to rise for 45 minutes.
Place the bread loaf into the iron cast pot, cover it with the lid and bake for 30 minutes.
After 30 minutes reduce the heat to 225 degrees, uncover the pot and bake for another 25 minutes until the bread is golden brown and created a crust.
Leave bread to cool.
